面条又名面、水面、面条子。 面条古称“汤饼”、“奢面”、“素饼”、“煮饼”、“水引饼”、“不托”等;面条一词是后来才有的;据考证,我国面条起源于汉代,至今已有2000多年的历史,因面条要在“汤”中煮熟,所以又叫“汤饼”。早期的面条有片状的、条状的。片状的是将面团托在手上,拉扯成面片下锅而成。到了魏、晋、南北朝,面条的种类增多。著名的有《齐民要术》中收录的“水引”、“水引”是将筷子般粗的面条压成“韭叶”形状。 面条常用的烹调方法有蒸、煮、烙、烤、炸、煎等诸多方法,制作的方法不同营养素损失也有所不同。 本APP介绍各种不同面条的制作方法。
